There is now an international awareness aimed at limiting the risks linked to the use of chemical products (Adoption of the Global Harmonized System by the UNO). In addition, the recent European Regulations (REACH 1907/2006, biocides 98/8/CE) aims to restrict the distribution of dangerous chemical components as well as strictly regulate their use.
The regular cleaning of industrial ovens, grills, and professional cooking materials requires the use of products specifically formulated for the cleaning of dirty grease. This particular application involves using very strong and corrosive surfactants which are able to remove burnt-on grease. The daily maintenance exposes the workers to toxic substances suspended in the air, which can be, even in a weak concentration, at the origin of serious chronic pathologies.
The limit of professional exposure (LVPE) allows the levels of concentration in the work place to be fixed. These levels must be respected in order to protect the health of the workers. Cleaning is generally made on a hot surface (> 50°C) and this increases the presence of pollutants in the air. Because of this, these values can easily be exceeded. The high number of risk components means that many different limit values should be respected. These values are fixed through observation, epidemiological studies, industrial experience and by monitoring by the doctors. The publication of the LVEP follows long studies of observation. This imposes a time difference between the application of safer regulations and the risks facing the workers. It is therefore necessary to anticipate the evolution of regulations in order to develop a work environment safer for the workers.
